I've used maize over a year old and had some good hits on it.

I normally leave it to ferment for a month or two then add loads of sea salt which goes a long way to preserving it

How long would you let it ferment for I normally give it a couple of weeks until it starts to smell slighty alcoholic and sweet. I watched a Liam bartrop youtube clip earlier and he suggested a couple of months does anyone else do this.
