If memory serves the velcro was included so we could velcro up a big fish and weigh it on/in the mat which is something I've never done.
Thing is, I've had enough of the almighty roar telling everyone else on the lake I've got a fish so I'm just about to cut it off, I imagine it'll fit a bit better into it's bag too.
Before I do, are there any other benefits to keeping it that outweigh it's roar because I can't think of any.

Only other benefit is if it's a Velcro retainer flap over the top. Lake I fish has a sack/retainer ban, so have to land the fish and unhook, Velcro retainer flap over fish while grabbing camera, scales etc. Only takes a few seconds to grab them, but you can bet a fish would be flapping about all over the place if not securely Velcro'd down!

Can't you just leave the fish in the net for a few minutes to recover, then get your stuff ready then...
A fish in the water is much safer than in an unhooking mat.

Doesn't really work on a public water supply reservoir, where there's no actual margins to hang the net over. Sometimes you can prop the net up off the back of the boat, but only if there isn't 2ft waves crashing into the shore.

Are we talking the velcro that's stitched all the way round the mat to keep the lid in place? Might cause issues unstitching it, why not just buy another piece of velcro and blank the mats velcro with it?
EDIT, not all the way around but in my case 3 sides.

The ones I have seen the Velcro is never there to make a mat a sling, Velcro isn't strong enough for that - as others have said it's usually there as a grab the camera whilst the fish thrashes on the mat. With that in mind you don't even need to rip open the Velcro if you are all sorted and ready. Just lay the fish on top. For me taking the lid off a bucket makes more racket than Velcro and if it's a stealth thing I think buzzers, the fight and photographing is more of a give away. I could well be missing the point as I am talking the flimsey covers of the nix mats of old.
If you use Vossy's tip and put on another piece of Velcro as a ‘blank' you can amuse yourself when bored by ripping it on and off every 30 minutes and wind the rest of the lake up by thinking you are emptying the place.

Put a bankstick in the V, leave the net in the margin and in the folds of the mesh the fish will lay quietly.
Obviously needs a deep mesh for it.

I've cut it all off, but left one strip on one side so when I'm bored I can tear it off to distract the snowflakes from watching love island in their bivvy with their door zipped up. 😂😂
