Thought China was the second largest producer and production from mining had slowed but is now increasing again. Also production from brine for use in batteries is more expensive due to processing costs I believe.

China seems to use the most but what Mr Google found for me puts them third in the production stakes. 2020 / 2021.
You could well be right on costs but I would have thought it also depends on things like brine concentration levels, available sun to do the evaporation and how long you are prepared to wait so some sources must be more viable than others.
Comparing the two systems there could also be some extra by products when mining which could have a value so that would add to profitability. Environmentally not so good though.
Not sure how it will go but you could invest in Cornish lithium, hard rock and geothermal water sources are being investigated.

Or there are different grades of lithium with the higher grades producing higher grade batteries with higher storage and longer life? Think I read something along those lines but can't remember details.

I think you're right otherwise why strive for better purity.
Also battery cells need to have similar characteristics otherwise that would cause problems when they are combined in a pack so some good quality control is needed.
