Need an air compressor suitable for an 8kg sausage extruder.
What size and power would I need?

Min 100ltr unless you want the compressor cutting in all the time. We use a hitachi silent compressor and it powers our extruder, air powered auto cutter and roller bumper without any issues and it's not constantly topping up the tank. My previous compressor wasn't silent. This one is much quieter.

What about operating pressure or are they all powerful enough?

the bigger capacity of the compressor the longer it maintains a high running pressure for without the compressor having to start back up to top it up it that makes sense
I apologise if i am going over things you already know when a compressor is turned on it runs until it reaches its preset charge usually around 8 bar at this point the tank is full. As you use it the air pressure drops then the compressor will kick back in usually around 5-6 bar (depending on compressor/switch settings) which refills the tank.
The capacity the longer it will maintain optimum pressure before a recharge it is more noticeable when using high drain air tools where sometimes you have to wait for it to charge to get better working pressure ie air gun undoing tight wheel bolts, when the compressor is running/charging it doesn't mean you cant use it it means it will be slightly down on pressure.
I have a 50l compressor in my garage when i use it with a 3kg bait gun doing 20kg of bait it charges itself around 3 times, now with my bait gun i dont need the full capacity of the compressor all the time
