I've cooked my maize (soaked 24 hours, cooked 30 minutes, then left in hot water to cool down over night) and when I finished cooking the maize yesterday it was perfect but when I've gone to package up today it's gone hard? Is this okay to use?
Only think I done different was add a handful of pink salt in while cooling down...

Are you freezing it for now or expecting it to last a long time?

Then don't worry about it, it usually softens a bit when it's been frozen

Sounds likely. I've never had maize dry on me and go rock solid. Only the other day I cooked and drained the maize then left to cook overnight before freezing. Still nice and soft.
Try using more liquid than you did the first time. Maybe it wasn't enough to soak them all the way. And remember it's 20-30mins of boiling not from when you turn the cooker on.
My usual method is soak for 24-36hrs. Bring to boil and simmer for 15mins. Close the lid and leave overnight to absorb the rest of the liquid before draining and freezing. I sometimes do it like most recently by draining straight away and cooling overnight.
