I haven't seen the video but I can probably imagine it was out of the water a good while.
In relation to how long they could be out of water (I don't condone anything over a few minutes) - I did hear a Simon Scott podcast where he was saying he has found one that had jumped out of his tank was there for a day or so and it made a full recovery.

I've subbed from the start of Cypography and watched it last night, I was surprised to see how long it was out the water, waiting for clouds to pass was cringe worthy as you say, I certainly wouldn't want to have a fish out the water that long, interesting what Mark Wilcox was reciting later on in the episode about a big Kent capture, the carp had some sort of stroke through stress of being caught and lost its colour and went blood shot in places, he really struggled to get it back and swim off! Now that'd be heart wrenching moments wouldn't it
