I use Camera Plus with my IPhone 6 Plus which is much better than the IPhone software especially in low light, it has multiple timer settings and will work with a blue tooth dongle and has a voice count down from 5 seconds to shot.

You have a few options.
As you mention, I use a cheap tripod with a bluetooth remote for stills:

Flash is always a bit of an issue I find at night, so again I've got a cheap bit of kit in an external lamp which goes on a storm pole via an adaptor:

Generally, I for 99% of the time will just have a video ready to go and screenshot photos as required so at least I know I have everything in frame and saves mucking around too much.
The portrait mode on the camera gets the best results I've found though, so would be interested as to how people set up so they can see what is within the frame when doing so without being too far back?
You can buy an app called ProCam for £7, which let's you do far more than anything I've been able to work out, including burst shots

20 quid is amazing value.
I'm till looking into the best flash/lamp options.
And I will check out that app along with some of the others suggested.
Hopefully I can work out a way to press the button on the remote, have a ~10 sec timer gap to pick up the fish, then set it to just fire off shots once a second or so.
As for framing up I think someone suggested doing it in the light, and putting a mark on your landing net pole with a bit of room for error and editing correction if needed.
If you peg your mat down, and make sure you are in the same spot for a self take it should be fine.
The way my mate takes pics I think I will be doing them all myself once I get the hang of it.

Whilst they always come in for stick on here, at the very mention of their name, I'm trying to cut down what I carry, so I just use my ridgemonkey bivvy light for extra lighting when taking photos. Can't see the point in carrying another light. I'm not into photography enough to carry an external flash. Plus they do a mount for it that means you can shove it on another bankstick off to the side out of shot. I've found that it helps my camera focus better in zero light conditions and if I shine the light on say a background bush/tree etc just behind me then you get a better photo. I'm no expert but it seems to help.

Yep you are right. To give yourself a reasonable starting point each time, you need a fixed distance from you and a fixed height of the camera each time to get yourself in the ball park each time.
I lay my landing net handle down from the edge of the mat, then set my camera at the same height each time. I'm using a small dlsr so I also set my lens to the same number. Obviously you won't need to do this with a camera phone.

No problem, I've been really pleased with the tripod and it packs down well too for the price.
Re framing, good points and that's pretty much what I try and do now - the issue was more so when using Portrait mode. I've found it difficult to get the depth / focus right when doing self takes using this mode, but if there was a way to get around this or see the screen that would be ideal!

Looking at some of the apps, you can shoot in RAW with normal focus and leave plenty of room for error on the framing.
As long as you capture it all well you can then crop it properly and blur the background a bit with editing tools.

I had a look at Camera Plus but it didnt look like it could be set to keep firing off shots after the timer.

I use Hey Camera app, sure someone recommended it on here? Use it on my old iPhone 6, it does the job.
