If you want alternatives to boilies, pellets and plastic there are lots of old school baits that are very effective and some of them are very cheap, which I suspect may be a consideration. Potatoes are definitely not one of them. This is one bait that should be consigned to history and forgotten. Really just don't.

Why not try it? Especially if you're stalking fish and you can see them - that will show you what they think. I've had mates catch carp on Opal Fruits and few carp refuse bread when its an option.

Saying that, I wouldn't use them...

I remember reading or hearing that potato cubes used to be soaked in coffee and used as a bait, cant remember whether it was succesful or not, I would imagine a carp would investigate.

Potatoes were used with succes very frequently pre boilie era.
You should boil the potatoes.
Potatoes can be used as pastes but as you boil them a bit shorter you can get them on a hair.

One last try. Do not waste your time. Unless you have almost exclusive access to a lake and you can spend months pre baiting you have no chance of catching. Even if you can fish such a lake in such a way your catch rate will be very poor, if you catch at all.
Read Rod Hutchinson book "The Carp Strikes Back" for what he thinks of spuds.
Read BB(Watkins Pitchford) about his baits.
Richard walkers record. crust. Chris Yeates record. Corn. Read what you like from the 30s onwards. None of the good, great or famous catches were made on spuds. Cast out a single spud into a lake full of carp it will be there come doomsday.
Anybody who encourages you to use spuds is taking the p*ss.
I learnt the hard way, don't know where Ynnek gets his info. You don't boil the potato, you part boil it so it stays on the hook, which it will, for ever, uneaten.

I get my info from a French guy, fishing a high pressured lake with lots of big carp. (up to 36kg)
He caught all of them using potatoes 😊
