Hi. I make thousands a year and there's a few tips I can give you that definitely improved mine when I was starting out.

1. You need your mix absolutely consistent. Weigh everything including the liquids
2. Once mixed put your paste in the fridge for 15/20 mins
3. Find a pop up mix you like and stick with it
4. Be careful how much acid ingredients you add as it will split the eggs making a consistent roll difficult
5. Extrusión is the key. You won't ever get consistent results using a hand gun pumping sausages on to a table. Get yourself a cheap battery gun and also a set of rollers. You can get the rollers cheap from RS Components. Track rollers.
6. Forgot making decent pop ups on Gardner tables. They are dog s@@t. If you are going to table roll pop ups then it's got to be shillam tables.
7. Nozzle size is key. Once you've got a consistent mix, then it will expand in a consistent way on every extrusion. So you can nibble away at the nozzle size until it's perfect.
8. Lastly you don't boil pop ups. They will distort. I get the water to boiling. Then turn it off. Once the bubbles subside I add the pop ups and keep them moving. You only need 80c to set the egg.

Hope this helps a bit. Feel free to pm me if you need any more advice.
