I know the difference between in the 2 in terms of waterproof ability, but what other pros and cons are there for each?
Is 5000hh good enough for any amount of rain we would ever have? Is the material inferior?

Yes 5000HH is plenty waterproof enough

Family frame tents are often around 3000HH so 5000HH is fine mate

In regards to thickness of material, would you happen to know if a 5000hh would suffer more condensation due to the thinner material?
I know condensation generally can't be avoided without a wrap etc, but would condensation be worse, or even better with a 5000hh material.

I dont think Hydrostatic head has got anything to do with thickness of material used
I have a few shelters my latest is a Solar undercover Brolly with a 10000hh and its a LOT thinner than my other brolly system thats 5000hh and is much thicker and twice as heavy

Arr ok, that's interesting.
I assumed that 10'000 would be thicker.

Condensation will be the same whether it's 5k, 10k or 20k.
I've recently sold on a 20k material bivvy... You may wonder why as 20k surely is better?...
Well... Not in my opinion. The 20k fabric gets the same condensation as a 5k or 10k but due to it's rubber coating it takes longer to dry out.. A lot longer. A 5k or 10k material imo is superior due to faster drying time, it wears better and to boot is cheaper.
Thickness of material is not related to the HH.
Condensation will be the same whether it's 5k, 10k or 20k.
