I fish my stems with a fluorocarbon leader, but being a bit of a novice don't know if thats right or wrong.

That is what I do when I'm using a leader mate but I don't always like using one tbh or a lake doesn't allow a leader

Same here, I only use a leader when allowed and only if needed.
