Get a solar panel if you don't want to pay for lithium power , at least you can top up the batteries when you're not in the boat

thats a serious battery muncher your only likely going to get around an hours running on that with a lead acid 110 not a weeks worth
think maybe you need to get something like this LINKY POO

I'll probably only go in speeds 1 and 2, will a solar panel give much charge?

Yes , a decent sized panel will do the job nicely , obviously dependant on the sun as to how fast it will charge

My mates just ordered the same boat fox 290. The 68lb I bought is no longer in stock, would a minn Kota 40lb be up to the job?

I have a 40lb and a 55lb , I rarely use the 55lb since buying the 40 it's plenty quick enough apart from if the wind gets up I'll use the 55
