As far as I am aware (and it is ages since I last tested them****) most liquid and powdered sweeteners are alkaline. This may or may not tie in with the level of overall (acid) attraction....But don't take my word for it...!
**** I did a lot of testing of sweeteners using a pH meter back in the 80s and the above was my conclusion. It may help others to know this...Tim Paisley also did similar tests in the early-to mid-80s and he too found the same alkaline pH readings. In fact he was jubilant when he found an acidic sweetener, but he wouldn't tell anyone what it was! Secret Squirrel
