I spent a month in Vietnam and two weeks in Cambodia a couple of years ago, imo spend more time in (north) Vietnam.

So much to do in three weeks so I would personally sack off Ho Chi Minh, Nha Trang and Dalat etc in south Vietnam etc. But I am sure others would say Ho Chi Minh is amazing..we had fun there but it doesn't compare to Hanoi.

Hanoi was one of my favourite cities, loads to see, great food and beer and soo cheap. Def do a food tour in Hanoi. Sapa north of Hanoi is great for trekking and scenery but if you want to get of the beaten track hire a motorbike from Sapa and drive to the Ha Giang area, close to Chinese border, we did a 4 night round trip and was up there with best things we did. Unbelievable views and no tourists, relatively! Halong bay is well worth a visit also on a junk boat.

Ninh Binh is the inland Halong Bay and incredible scenery, Phong Na caves are amazing but takes a bit of travel but would certainly look into. Hue imperial palace is cool but Hoi An is a must, my gf loved it there. A bike ride from Hue to Hoi An takes you across the scenic coastal road ala Top Gear.

Cambodia wise we only did Siem Reap (Angkor temples) and Phnom Penh. Siem Reap was great fun - very touristy however, some of the temples away from the main angkor wat are incredible also and less busy, the landmine museum was very interesting and sad. Phnom Penh I would say give it a miss unless you would like to see the killing fields and S21 school. Absolutely harrowing places.

Lots of people we met went to Sihanoukville on Cambodian coast for beach time, heard mostly bad reviews to be honest so we didn't go.

I did try to scope some fishing over there but had no luck - I came across a website of sorts about a lake in Hanoi but didn't end up investigating. Also there was a random "fishing" lake in one of the Angkor Temples (Banteay Srei i think) with signs for fishing off a pontoon, looked dodgy

Def echo what was said earlier and try and do everything yourself!

I have travelled from Thailand through to Laos , across to Hanoi, Halong bay and then travel down the coast making your way to Ho Chi Minh and then across to Cambodia and onward to Thailand .
We are going back to Vietnam next year, very interesting and scenic country.

Some beautiful beaches , tunnels of Cu Chi is a must visit.
Travelling by train is a fantastic way to see the country.
I have recently bought the latest addition of The Lonely Planet Vietnam book.

It was about 15 years ago I visited Cambodia and it was a crazy place .phnom Penh , Sihanoukville and of course Sien Reap (Angkor Wat)

No need to go on an organised tour just do it by yourself , you will love it

Saw a documentary the other day where they went to the killing fields in Cambodia

not personally but have a few mates who go there via trips with intrepid travel. bit pricey but your days are filled with different things..my mums done the Mekong a few times ill see her tomorrow and ask her about that.
