Been watching a number of vids on how to tie the German rig.

Most use a 25lb coated hooklength from whichever company they are promoting.

Which is the best to use to avoid tangles? Are some stiffer than others?

20lb amnesia is tangle free, or go 30lb if you want it stiffer

Did any of those videos include a tungsten bead an inch from the hook? If so you'll not likely get tangles even with wafters.

25lb coating unstripped is spot on, rig doesn't perform as well with anything stiffer.
