I've tied knotless knot hundreds of times with braid and normal mono perfectly. However when I use it with stiff material like mouth trap when I go to bed the knot down it always twist out of centre from the shank. You can tweak it back in line with you fingers but this creates twist at the end of it.
Any hints how to prevent this twist or lock it down?

Check out the whipping knot, it can be a nightmare to learn but will solve the problem you're having

Whip it with the hair coming off of the side of the shank slightly. When you tighten up it will pull the hair into position. I do this when tying the HSR.

Try it with an offset hook.
Or use a whipping knot.
But i dont think the fish are that bothered really.
