What is the reason for wrapping lead wire on the hook for paste fishing, is it necessary to weight it or is it just to help the paste grip?

May be of interest, maybe not, Korum Paste Cages are pretty handy, either on the hair of tied to the hook, great with spam.

I thought so, I'll probably just do a couple of stop knots with heavy mono, I won't be using a hair so I don't think the cage/spring things will work
Or mould the paste round an 8mm boilie like the match guys use

I like the idea of the enterprise ones, I'd probably just use a pellet and a short bit of mono for the same effect though.
I'll be trundling it along a river so I don't really need something to hold for ages, it'll probably be 10 mins max between casts using a fairly stiff boilie paste
